General Comments
Haccp: discussed the importance of hot water and proper dish washing methods.

PER THE DIRECTOR OF ENVIRONMENTAL HEALTH, FACILITY IS BEING GIVEN 10 DAYS TO CORRECT THE HOT WATER AND DISH WASHING METHODS. FACILITY MUST EITHER INSTALL A 3-BAY SINK OR MECHANICAL DISH WASHING MACHINE; MUST HAVE HOT AND COLD WATER UNDER PRESSURE TO ALL SINKS INCLUDING RESTROOMS. IF FACILITY FAILS TO INSTALL THE PROPER EQUIPMENT AS STATED IN THIS REPORT, FACILITIES 2011 FOOD LICENSE MAY BE SUSPENDED ALONG WITH A $500 FINE.

A FOLLOW UP WILL OCCUR IN 10 DAYS.

*1  Observed can of crushed tomatoes in dry storage with severe dent on side of can. Please provide food to be wholesome. Can discarded, see voluntary destruction agreement. (750.100) Immediate/Onsite
*20  Observed improper sanitizing of all dishware. Facilities mechanical dish machine is broken and there is only a 2-bay sink. All dishware must be sanitized in the following manner: 1. hot soapy water at 110F in 1st bay, 2. hot clean rinse water in 2nd bay, 3. sanitize in 3rd bay for immersing for one minute. Until a 3-bay sink or mechanical dish washing machine can be installed, please wash all dish ware in the following manner: 1. fill 1st bay with hot, soapy water @110F 2. fill 2nd bay with clear, hot rinse water 3. once all dishware is cleaned and rinsed, empty 2nd bay of clear rinse water and fill with sanitizer and immerse dishware for one minute then place on counter to air dry. Please provide either a 3-bay sink or mechanical dish machine for properly washing, rinsing and sanitizing all dish ware. (750.830) Observed no sanitizer set up for washing counter tops.
